The Burrito Bowl – Quick And Easy Dinner Fix!



A few nights a week, after work I pick up my daughter from her Granny’s house and by the time we get home it’s close to 6:00. She’s hungry and tired, I’m starving, backpacks get tossed on the floor, shoes are kicked off anywhere except the mud room, homework is waiting, permission slips need to be signed, reading journals to be colored, baths to be taken….you get the idea.

It’s my least favorite part of the day. And somewhere in all of this I’m supposed to cook dinner? Really? I do the best I can, but there are some nights where it’s just not going to happen. But after a long day, the idea of cereal or frozen pizza for dinner is soul-crushing.

I have a few no-cook meals I can quickly toss together on nights like these. This burrito bowl is one of my favorites. I use the microwaved brown rice from Uncle Ben’s, some canned black beans, shredded cheese, avocado and salsa. Put it in a bowl and microwave until the cheese is melted and the beans are heated through. Wa-lah. Dinner. Done. If I have leftover chicken or steak in the fridge I’ll toss that in too. This is a great use for those rotisserie chickens from the grocery store. You could also omit the rice and put these ingredients together with mixed greens to make a salad. When I do that, I can skip the salad dressing because the salsa acts as a dressing. Or if I have tortillas on hand I’ll use those to make quick tacos. Please excuse the lazy iPhone photo. I was too tired to cook…I was also too tired to take a proper photo. Did I also mention it was a Monday? 🙂

    I love throwing together stuff like this, whether it’s in tortillas or like this, burrito bowls. Avocados on hand at all times are a must! I would be so happy living in a place where I could grow my own avocados…

      I feel ya’ on the avocados. I buy one every week and add it to salads, sandwiches, breakfast wraps, etc. They’re the best!
