Maple Quinoa Breakfast Bowl

Serves: 2 bowls
  • 1 cup quinoa
  • 1 cup 1% milk
  • ½ teaspoon vanilla
  • ¼ cup unsweetened coconut flakes, toasted
  • ¼ cup slivered almonds, toasted
  • 2 tablespoons maple syrup
  • Dash of cinnamon
  1. Combine quinoa and milk in a medium-sized sauce pan and bring to a boil over high heat.
  2. Stir gently, reduce heat to low, cover pan and simmer for 15 minutes or until all of the milk has been absorbed. Quickly check once or twice while it's simmering and give it a quick stir, if needed, to prevent the quinoa from sticking to the bottom of the pan. Once the milk has been absorbed, let the quinoa rest for 5 minutes and then gently fluff with a fork.
  3. Stir in the remaining ingredients and serve immediately.
