My spirit and my attitude need a little taste of sunshine and summer. I’m craving flip flops, sunshine and swimming pools. I am a summer girl – I’m not cut out for this winter stuff! Yet, I’ve lived the last 15 years in one of the coldest parts of the country. What the?… If you too are stuck in a deep freeze, let me help brighten your day with this smoothie. The flavors of mango, pineapple and orange juice taste like summer. This smoothie is so bright and happy and refreshing. I just love it! I don’t have one of those fancy, powerful blenders so I like to let the frozen fruit thaw for a bit to make sure my blender can handle it. I put the fruit in the blender when I wake up and by the time I’m finished getting ready for work I just add the rest of the ingredients and blend everything right up. No problem. Depending on how large your serving is, this makes enough for about two smoothies – my daughter and I usually share – or enough for one large smoothie and a little snack later. You can easily double this recipe if your blender is large enough. There’s something you should know about me. I love Oprah. I love, love, love her. I understand not everyone loves Oprah and if you don’t happen to love her (??) we can still be friends, just don’t knock her in my presence, k? Once upon a time, I was a 6th grader at Leawood Middle School back in Leawood, KS (yea Kansas!) and we had a year-long reading contest where we earned monopoly money for every book we read. Throughout the year students wrote letters to our favorite stars asking them to donate items to our auction and on the last day of school we used our monopoly money to bid on the items. Guess who I wrote and asked for a donation. Oprah. Duh. And to Oprah’s credit she sent back an autographed head shot for our little auction. I read and read and read all year long (totally ahead of the curve on Oprah’s Book Club!) because I was absolutely determined to earn enough money to buy that picture. And guess what? I did! And guess what else? I still have it! 20+ years later and I still have the picture. Why am I telling you all this, you ask? What does this have to do with turkey burgers, you’re wondering? Let me start by saying that 99.9% of the time turkey burgers are dry, bland and taste like sawdust. Everyone swears their recipe is different but it never is. It’s dry. It’s bland.
