Mixed Berries with Ginger Syrup

  • ½ cup granulated sugar
  • 1 cup water
  • 1 2" piece fresh ginger, peeled
  • ¼ watermelon, cut into ½" cubes
  • 3 cups strawberries, hulled and halved
  • 1 pint blueberries
  • Fresh mint
  1. Place sugar, water, and ginger in a small saucepan and bring to a boil. Reduce heat to medium-low and simmer for 5 minutes. Turn off the heat, discard the ginger and let the syrup cool completely. Place the fruit in a large bowl, add the syrup and mix well taking care not to mash the fruit. Serve chilled and garnish with fresh mint.
