Breakfast, Lunch and Dinner – Done Amazingly (Recipe Roundup)

Over the last few weeks, I’ve made a conscious effort to get out of my cooking rut. At work I’m constantly making new recipes but at home, just like you, I get into a rut and tend to make the same things over and over. I’m always looking at food websites and blogs and pinning things I want to try, so I scoured my Pinterest boards and finally made a few recipes that had caught my eye. I only recently discovered the vegan food blog Oh She Glows, but I love it already. Although I’m not vegan, or even vegetarian, I love all of the healthy, whole foods recipes on this website like this 5-Minute Oatmeal Power Bowl. I’m normally a peanut butter toast and banana for breakfast kind of girl so this oatmeal has been a nice change of pace. I take it to work with me in the morning, heat it up in the microwave at the office and top it with sliced almonds and cranberries. Yum!



This Slow Cooker Chicken Tikka Masala from The Kitchn is one of the best new recipes I’ve tried in a long time. Be aware it does require some prep work. I did all of the prep work and marinated the chicken the night before and put everything in the crock pot the next morning before work. I made this the day before Thanksgiving and it was so delicious and a much appreciated change of pace from all of the holiday food. I actually looked forward to eating the leftovers and will def be putting this on the regular rotation at my house.

Pinch of Yum is another food blog I love and read regularly. Lindsey’s writing style is so fun and engaging and her photos are beautiful but this is the first of her recipes I’ve made. And I’m so glad I did. This Chopped Thai Salad w/ Sesame Garlic Dressing was like an explosion of flavor, colors and texture in my mouth. And the Trader Joe’s Thai Lime and Chili Cashews? Ridic!!
